Thanksgiving Day – and the Under-Appreciated Sweet Potato

Thanksgiving Day has arrived for those of us in the United States and Canada. It’s a day with a point, and feasting. Our Thanksgiving meals often include sweet potatoes. Later in life, a wonderful woman taught me that sweet potatoes are a very much under-appreciated food in terms of taste and nutrient value.
